    One of the characteristics that makes Santceloni a standout is the focus on its raw materials. Using seasonal products is the golden rule in this kitchen, where you’ll find dishes starring the truffle in winter, peas in spring, tomato in summer, and mushrooms and game in the fall. This respect for nature determines not only the seasonal selection of ingredients, but also the choice of cooking techniques and preparations that bring out the products’ flavors and qualities. The subtle and elegant always triumph over the flashy.

    Santceloni opened its doors in 2001 with the clear aim of offering traditional and seasonal cuisine, in an avant-garde fashion, and giving diners a complete haute cuisine experience.

    Since then, and under the same team of young but experienced professionals led by chef Óscar Velasco, Santceloni hasn’t lost a drop of the values that have made it one of the best restaurants in Madrid and among its most internationally-recognized venues.

    The first Michelin Star arrived just a few months after the restaurant opened, and the second not long thereafter. By 2003, Santceloni had amply demonstrated its exquisite handling of both its dishes and its guests, becoming one of only 5 restaurants in Madrid with two MICHELIN Stars.

    Santceloni is also a member of Relais & Châteaux, a prestigious association of luxury hotels and restaurants whose membership implies high standards in the five “C”s: character (meaning authenticity), courtesy, calm, charm, and cuisine. Joining Les Grandes Tables du Monde is another of the restaurant’s outstanding achievements. This exclusive club demands members fulfil three essential requirements: overall culinary excellence; generous, hospitable service; and a location that is both unique and characteristic, requirements that coincide perfectly with the philosophy of Santceloni.

    In addition to respect and care for the products we serve, the combination of excellent cuisine and excellent service is a key value of this Michelin-starred restaurant. We also maintain a carefully curated wine cellar with over 900 choices; a selection of cheeses that numbers over 350; and produce homemade artisanal bread. The kitchen, the dining area, and our cellar thus constitute three fundamental pillars of the Santceloni experience, but we are mindful that we would not have achieved recognition without the support of the excellent team that has been in place since our establishment.

    Directed by Abel Valverde, our service is one of the highlights of Santceloni. Personal treatment and attention to detail are maximized, with the entire team functioning like a Swiss clock in the service of total customer satisfaction. One of the unique features of our dining area its its two large tables for cheese tasting, where our award-winning manager carefully selects 7-11 new varieties for each diner to discover, based on her personal preferences.

    KITCHEN

    The kitchen, directed by Óscar Velasco, puts utmost value on respecting the products. Thus, a new menu is developed each season to include the raw ingredients produced at that time of year. Santceloni’s kitchen is one in a state of constant change, moving to nature’s rhythms but maintaining a firm connection with trusted providers.

    WINE CELLAR

    Offering more than 900 top choices from all over the world is one of the consistent concepts of the Santceloni cellar, curated by expert sommelier David Robledo. David guides guests through a special tasting voyage in his Travel Wine Experience, a wonderful way to discover new wines, with a charming presentation in trolleys that recreate the old train trolleys of the 20th Century. It is a unique way to try the best national and international bottles on offer, and you’ll take home a souvenir passport stamped with the countries of origin of each wine you sample.

    With the objective of making Santceloni a complete culinary experience, this space was opened in 2016 and can accommodate up to 10 guests. Here, the dining and kitchen areas meld, with a window offering a view onto the process of turning raw ingredients into the dish that comes to the table. It is an elegant way to understand our kitchen in first-person and experience the commitment of the Santceloni team to unfiltered haute cuisine.

    THE CIGAR CLUB

    For those who believe that the best way to end a great dining experience is a good cigar (whether Dominican, Nicaraguan or Honduran), Santceloni offers the Cigar Club. This open space is characterized by sober and elegant charm. For those who are novices in the pleasure of lighting an exquisite cigar, our expert room team will offer advice. And our careful selection of spirits will live up to the momento as well, including standout madeiras, port, cognacs, armagnacs and whiskeys.
