    Santceloni’s team is headed by chef Óscar Velasco, whose mindful treatment of ingredients and respect for the rhythms of nature is matched only by his virtuosity with new cooking techniques. If you had to choose one word to define his cuisine, it would be “earthly,” because, without eschewing presentation or cutting-edge techniques, his prime objective when creating a dish is to respect the raw ingredients. Standouts among his mentors include Martín Berasategui (holder of 12 Michelin Stars) and Santi Santamaría, who brought Velasco to Santceloni when it opened in 2001.
